I recently bought a couple of Beavercraft knives, but have also struggled to source basswood during UK lockdown. I've had some luck with used pallets, it's total pot-luck over the timber used but they have the advantage of being reasonably common and free. Once your knives arrive if you can source some pallets all you need to do is to take a few test cuts to get the feel for how well it carves. Chances are it'll be tougher or looser grained than basswood, but for practice until you can source better it might help you 'scratch that itch'.

Doug Linker's beginners guide series includes a vid on making and using a strop, which is pure gold for us newbies. I'm using a home made strop with Autosol for grinding paste cos Halfords is still open Doug's advice "If you can't slice end grain cleanly it's time to strop' has served me well. Doug also advises 'Stay away from kiln-dried!! It will carve Probably great training for knife stropping though I need to strop every few minutes when carving the tought stuff.
